Appendix AD – Martian Cookery Aboard the Great Fleet
(From the Memoirs of Orion Voss-7)

“By the time the Mayflower cleared the orbit of Jupiter, the ship’s galleys were running on the Taste of Mars canon. What began as survival rations in the Martian caves had become tradition: morning dandelion-root brew and mushroom tea, midday Mushroom-Truffle Putty on quinoa flatbread, and slow evening stews that reminded every Rubyborn why their grandparents had chosen expansion over exodus.”

The kitchens of the torchships do not merely feed the body — they carry the living heritage of the Martian colonies. The foundational text remains The Martian Cookery and Practical Settler: First Cookbook of the Martian Colony, still the most-thumbed digital and physical volume in the ship’s library.

Core staples (all grown in multi-deck hydroponic towers using recycled water Stages 3 & 4):

  • Algae (protein paste, syrup, oil, “milk”) — backbone of smoothies, sauces, and desserts.

  • Mushrooms (oyster, shiitake varieties) — umami heart of putties, stews, and “bacon” strips.

  • Dandelion root (roasted) — the ship’s daily “coffee.”

  • Dried & ground medicinal mushrooms — the calming, earthy “mushroom tea.”

  • Quinoa, mung beans, chia, buckwheat, amaranth — flours, milks, tofus, and flatbreads.

  • Fast greens, carrots, onions, herbs (mint, thyme, oregano) — salads, ferments, and morale lifts.

Signature shipboard dishes adapted for three-shift life and dual-deck gravity:

  • Morning Ritual: Warm porridge with mushroom crumble + roasted dandelion-root brew.

  • Midday: Martian Algae-Quinoa Risotto or Cabbage-Onion Congee.

  • Evening Social: Spiced Mushroom Stew, Carrot-Mushroom Pasty, or Rabbi Cohen’s rotating “Pub Grub Night.”

  • Treats: Mars Choc Bars (carob + algae), Cucumber-Lemon TANG Tea (fizz optional during coast phases), and Chia Pudding.

All waste returns through anaerobic digesters to fertilizer. Nothing is lost. The same ingenuity that turned red dust into feasts now sustains us between the stars.
